Potato and Pea Dry Aloo Matar (Oven Baked)

Indian Style Veggie Dish

Serves 7 – 8

Ingredients:

1/2 t cayenne pepper

1/2 t cumin powder

1/2 t sweet paprika

1/2 t ground ginger

1/2 t coriander powder

4 T sunflower oil

1/2 onion finely sliced

4 medium potatoes cubed

1 kg pack of frozen peas

Fresh chopped parsley / coriander to garnish

Method:

preheat oven to 180°C / 350°F

spread the oil in the bottom of your ovenproof dish

add onions, potatoes, spices

stir very well

place in oven (covered) for 10 min

add frozen peas

Cover

cook for 25 min, stir

cook for another 15 min  (covered)

garnish, and serve
