Caribbean Style Flat Bread

Makes 8


3 c Plain Flour + (1/4 c for dusting on your work surface)

2 t Baking Powder

1/2 t Salt

2 T Sunflower / Vegetable Margarine

1 T Olive oil

1 c Hot water

+/-  1/2 c sunflower oil for brushing


In a bowl, sift the flour, baking powder and salt

Add the margarine and olive oil


Add the hot water (it should bubble)


Mix with a spoon to combine

knead to form a firm dough

cover with a moist kitchen towel (until you have prepared your filling)


flour your surface, knead and roll your dough


cut into 8 equal parts


stand each one and flatten


with a rolling pin, flatten them quite thinly


To Cook:

  1. Lightly brush a pan with the sunflower oil, and heat
  2. place your roti, brush the top with oil
  3. allow to cook till golden
  4. flip over and cook till golden

lower the heat to a medium temperature

repeat numbered steps with each roti

Quick Tip:

When removing the cooked roti, place it on a moist towel, then add your filling and roll.  You need to roll them while they are still very hot, otherwise the will break.
