Fried Crispy Calamari

Greek Style

Serves 4 – 6

Ingredients:

2 packets frozen calamari (thawed)

2 – 3 c cooking oil (depending on the size of your pot)

1 c plain flour

1 T baking powder

1/2 c breadcrumbs

1 t  black pepper

1 T origano (dried)

pinch of salt

Method:

In a strainer, wash and thaw you calamari completely.

Squeeze out any excess moisture

In your frying pot, add your oil, and heat on high (the oil must be hot)

In a clean, dry plastic bag, add your flour, baking powder, crumbs, pepper, oregano and salt.

mix it well.

take 2 handfuls of calamari (don’t put all the calamari in the flour mixture, it will turn pasty, we want it dry, and also don’t let it sit in the flour, just coat and fry) and place it in the bag,

spin the bag closed allowing an air gap,

shake and coat the calamari

Fry for 5 minutes, making sure to cook it evenly all around.

Remove and place on kitchen towel to absorb excess oil.

Flour the next 2 handfuls and fry…

continue until all your calamari is cooked

serve with lots of lemon, chips (french fries), tzatziki, tarama or even a simple mayonnaise.
