Chicken Noodle (fides) Soup

This is the perfect soup for colds and flu’s, or even just a light, evening meal.  I make loads of it, since it’s all my sickies can swallow, until they feel better.

Serves 8 – 10

Ingredients:

  • ± 3.6L Water
  • 2 Chicken Breasts (skinless and boneless) roughly cut into 4 – 5 pieces
  • 3 T Chicken Stock Powder
  • 2½ – 3 c Fide noodles
  • 1 T Lemon Juice

Method:

In a large pot, add 1.8L of water, and the chicken

cook for 20 minutes (the time may vary according to how big your chicken pieces are…smaller = less time)

Remove foam from the top of the broth with a spoon and discard.

Remove chicken from broth, and shred using 2 forks. (or your fingers once it’s cooled down)

Place back in broth and add 1L – 1,8L  of water (depending how watery you like your soup), and bring to a boil.

Add the chicken stock, and the fide noodles.

Boil for 3 minutes (If you using different noodles, follow instructions on pack)

Turn off heat

Add Lemon Juice

Serve Hot
