Spicy Pumpkin Pudding

This ended up being so delicious, I almost finished the entire dish on my own.

Ingredients:

  • 2 c Grated Pumpkin
  • 397g can Caramalized Concentrated Milk
  • 500ml Whipping Cream
  • 1 T Ginger Powder
  • 1 T Cinnamon Powder
  • 1 T All Spice Powder
  • 10 Marie / Maria biscuits
  • 10 Coconut cookies

Method:

Whip the cream to form soft peaks

In a separate bowl, add the pumpkin, caramelized concentrated milk, ginger, cinnamon and all spice. Mix well.

Fold into the cream

In a dish, roughly crumble all 10 maria biscuits, and 5 coconut cookies, to cover the bottom completely.

Using a spoon, add the pumpkin mixture, layering it all over the crumbs.

Finish by adding the remaining 5 coconut cookies (Crumbed)

Refrigerate for about an hour before serving 🙂
