Oven Baked Chicken Thighs, with Veggies

Serves 4

This yummy dish, is cooked to perfection, moist and tender.

Ingredients:

  • 4 Chicken Thighs
  • 1 Carrot
  • 3 Zucchini
  • 2 Sweet potatoes
  • 1 Potato
  • 1 t Oregano
  • 2 T Butter
  • 3 T Olive oil
  • 1 t Salt
  • 1 T Chicken spice
  • 1 t Powdered chicken stock
  • 1/4 c Water

Method:

  • Pre-heat oven 360 c (high)
  • Wash chicken, place in oven proof dish
  • Clean veggies, peel if you prefer, roughly chop into big chunks, place in dish
  • Add olive oil and mix to coat everything.
  • Add all remaining ingredients
  • Cover, bake for 1 hour
  • Uncover, turn chicken over, bake for 20 min
  • Turn chicken over, bake for the final 20 min
