Pourgouri with Chicken


This yummy Cypriot dish, can be served as a main or a side dish.

For a vegetarian version, leave out the chicken 😉


  • 500g Pourgouri (Bulgur Wheat)
  • 1 Onion – chopped
  • 2 – 3 Chicken Breasts – Cubed
  • 4 Tomatoes – grated or chopped
  • 1/4 c Olive Oil
  • ± 3 c Water
  • 2 Veggie Stock cubes
  • 1/2 t Black Pepper
  • 35g Tomato Paste
  • Salt (to taste)


  • Heat olive oil, and fry chicken until cooked
  • add the onions, cook until soft
  • add the tomatoes, water, stock, pepper, tomato paste and salt


  • add the bulgur wheat, stir to make sure everything is combined, cook for a few minutes (follow instructions on the packet)
  • cover, allow most of the moisture to be absorbed
  • Serve as is, or with greek yogurt, for an added flavour burst.
