Grilled Aubergines

Healthy and delicious alternative to frying, I love veggies, and this is one of my favourites.

Ingredients:

  • 3 Aubergines / Eggplant – cut into wedges
  • 5 T Olive Oil
  • 1 T Oregano
  • Salt

Method:

  • Add all ingredients and mix till evenly covered
  • place in one level, try not to overlap the aubergines, so they can cook evenly
  • Grill on medium rack for 10 minutes
  • Turn over
  • grill for another 5 minutes
  • serve as a snack, side dish, main dish, any dish 🙂
