Chunky Grilled Veggies

I love veggies, and any dish that is quick and yet still delicious, and this is one of those dishes…

Ingredients:

  • 1 Parsnip
  • 1 White Sweet Potato
  • 1 Orange Sweet Potato
  • 1 Carrot
  • 3 Bell peppers in different colours
  • 1 Small Onion
  • 1 Garlic Clove
  • 1 T Balsamic Vinegar
  • 1/4 c Olive Oil
  • 1 t Oregano
  • 1 t Salt

Method:

  • Pre-heat your oven
  • Chop all the veggies into bite-size chunks
  • Place in an oven sheet / dish
  • Add the rest of the ingredients
  • Make sure everything is coated evenly all around
  • Try have all the veggies in on layer
  • Place on a low rack in the oven

  • Grill for 10 minutes
  • Stir
  • Grill for 5 minutes
  • Serve as side dish, or main dish.
