I have recently discovered the “instant BBQ grill” and find it so easy, quick, convenient and a perfect excuse to BBQ on a regular basis. I used it for this recipe, but it is not necessary, just a lot quicker to start cooking when there’s not enough time.
- 2 Chicken Breasts
- 2 T BBQ Spice
- 2 T Greek Yogurt
- Slice the Chicken Breasts across into 2 or 3 slices, depending on the thickness of the chicken breasts
- sprinkle 1 T BBQ spice all over the slices
- Grill for 4 min on each side
- add the remaining spice to the yogurt, and brush on the top of the chicken while grilling, turn over, repeat until the chicken is completely cooked (it should be white, not pink).
Because the chicken was sliced it this manner, it cooks really fast, so keep an eye on it, and the yogurt tenderises it, while it’s cooking, leaving it moist and tasty.
