Pasta, with Zucchini

This dish is perfect, for when you don’t have a lot of time, but you want something warm, simple and light-ish…



  • 500g Pasta
  • 2L Boiled Water
  • 2 Garlic Cloves
  • 2 Veggie Stock Cubes
  • 2 T Veggie Butter / Margarine
  • Salt
  • 5 c Zucchini (Chopped)
  • Parmesan Cheese (grated)  can be omitted for a vegan alternative



  • Boil Pasta in Water, and veggie cubes until el-dente
  • In a separate pan,
  • heat butter and garlic, add zucchini and salt
  • cook to your liking, (I prefer it still slightly crunchy)
  • strain pasta, add to zucchini pan, stirring so the juices can coat the pasta.
  • serve with parmesan
