Herby Grilled Root Veggies

Ingredients:

  • 3 Carrots
  • 1 Parsnip
  • 1 White Sweet Potato
  • 1 Orange Sweet Potato
  • 2 Potatoes
  • 1/4 c Olive Oil
  • 1/4 c Balsamic Vinegar
  • 1 t Dried Mint
  • 1 t Dried Majoram
  • 1/2 t Dried Rosemary
  • Salt and Pepper

Method:

  • Cut all the veggies into thick wedges / strips
  • In an oven tray wide enough to fit all the veg in a single layer, add and combine all ingredients, making sure everything is coated.
  • Grill in a low rack for 5 minutes
  • turn over
  • grill for another 5 – 8 minutes.
