Banana Fritters

These yummy treats, can be enjoyed hot or cold.

Ingredients:

  • 1/2 Lemon Juice
  • 8 Bananas
  • Oil – For Deep-frying

Batter:

  • 1½ c Flour
  • 4 T Sugar
  • 2 T Sunflower Oil
  • 1½ c Water
  • 3 Egg Yolks
  • 3 Egg Whites
  • Salt

To Serve:

  • 2 Vanilla Sugar Sachets
  • 1 t Cinnamon Powder

Method:

  • Peel and slice bananas diagonally
  • squeeze lemon juice over them, to stop them from going brown.

  • In a bowl, sift the flour, sugar and salt

  • add the egg yolks, oil and water gradually while mixing to form a smooth batter

  • let it rest for ± 1 hour
  • in a separate bowl, beat the egg whites to form stiff peaks

  • fold into the batter
  • drop a few bananas into the batter at a time

  • heat the oil
  • spoon each battered banana into the oil (as many as you can fit in your pan)
  • fry till golden
  • strain on paper towel
  • sprinkle with vanilla sugar and cinnamon
