Caramelised Carrots and Sweet Potato

Sweet sweet beautiful vegetables.



  • 3 Carrots
  • 2 Sweet Potatoes
  • 1 Onion
  • 1 T olive Oil
  • 1 T Butter (Veggie Butter)
  • 1 T Sugar
  • 1 T Balsamic Vinegar
  • 1 t Oregano
  • Salt and Pepper


  • Cut carrots, sweet potato and onion into thick strips.
  • Heat olive oil, cook onions for 1 minutes


  • add sweet potato, cook for 2 minutes
  • add carrots, cook for 2 minutes or until tender


  • add the butter, allow to melt for a minute
  • add balsamic vinegar,cook for 2 minutes
  • reduce the heat, add sugar combine for 3 minutes
  • turn off the heat, finish with oregano, salt and pepper.

Enjoy as a side dish.
