Sweet sweet beautiful vegetables.
- 3 Carrots
- 2 Sweet Potatoes
- 1 Onion
- 1 T olive Oil
- 1 T Butter (Veggie Butter)
- 1 T Sugar
- 1 T Balsamic Vinegar
- 1 t Oregano
- Salt and Pepper
- Cut carrots, sweet potato and onion into thick strips.
- Heat olive oil, cook onions for 1 minutes
- add sweet potato, cook for 2 minutes
- add carrots, cook for 2 minutes or until tender
- add the butter, allow to melt for a minute
- add balsamic vinegar,cook for 2 minutes
- reduce the heat, add sugar combine for 3 minutes
- turn off the heat, finish with oregano, salt and pepper.
Enjoy as a side dish.
