Seafood Risotto

For all seafood lovers, this is a “must try dish”.  Warming, filling and tasty.

Ingredients:

  • 1/2 onion chopped
  • 2 T Butter
  • 2 Veggie Stock Cubes
  • ±500g Mixed Seafood
  • 250g Risotto Rice
  • 2 T Olive Oil
  • 1/4 c White Wine
  • 700 ml Water
  • 2 T Parmesan Cheese Grated
  • Salt and Pepper

Method:

  • Melt Butter and Olive oil, add onion, fry till soft

  • add rice, fry for 3 minutes, add wine, allow to absorb

  • add stock and seafood, add water bit by bit (once it absorbs add more) stirring continuously, until cooked

  • add salt and pepper
  • finish off with parmesan

  • serve hot
