Chunky Root Veg Curry



  • 3 Parsnips
  • 1 Sweet Potato
  • 3 Carrots
  • 6 Small Potatoes
  • 4 T Oil
  • 1 Garlic Clove chopped
  • 2 Veggie Stock Cubes
  • 3 T Mild Curry Powder
  • 1 T Lemon Juice
  • 1 T Garam Masala
  • 2 T Chopped Parsley
  • water


  • heat oil, add potatoes, parsnips, carrots and sweet potatoes, cook for 10- 15 minutes


  • add garlic, veggie stock and enough water to cover, and allow to boil
  • in a small bowel, mix curry, garam masala and lemon juice to for a paste


  • add paste to veggies, cook until veggies are ready.
  • turn off heat and add parsley.
