Orzo with Wild Mushrooms

Deliciously fast vegan dish.

Ingredients:

  • 1T Sunflower oil
  • 1c Chopped Mushrooms
  • 2 Veggie Stock cubes
  • 2 Garlic Cloves
  • 250g Tomato Pure
  • 2c Orzo (Pasta Rice)
  • 5c Boiled Water
  • Salt and Pepper

Method:

  • In a pan, add oil, garlic and stock cubes

  • then add orzo, stirring to make sure it’s evenly coated
  • add the mushrooms, cook for 10 minutes

  • add the pure, water, salt and pepper
  • boil for 10 minutes stirring occasionally.

  • Serve Hot
